This menu is comprised of classic Bistro dishes. Bistro to me means simple honest cooking with everyday ingredients. The shopping list for this menu is one of the least expensive I have done, and yet these dishes are some of the most satisfying. The onion tarts are the essence of what an onion tart should be. Plain and simple. Make sure you make enough because they will disappear! Leeks vinaigrette are another classic. By cooking the leeks in the microwave you eliminate any fuss, making this a very easy dish. It also presents beautifully. The scallops with asparagus is the only dish I have updated. This is a take off on the classic baked scallops with butter and breadcrumbs. I added asparagus to the dish to brighten it up and cut down on the butter. The garlicky breadcrumbs make a delicious topping. The warm potato salad is one of my favorite easy dishes. It is essential to add the vinaigrette while the potatoes are still hot. We finish with a classic bistro dessert. This is a French style apple tart. Thin crust, full of flavor. |

I keep a bottle of vermouth by the stove for cooking. I don't always have a bottle of white wine open and I don't like to open one when I just need a little. The vermouth keeps forever and you don't even have to refrigerate it. |
